1# dried beans (pinto, black eyed peas, or personal preference)
1 15 oz. can tomatoes
1# Dried chipped pork
1 onion diced
Garlic, crushed ..2 tbsp+/- .. to your taste
Salt ..1 tsp+/- .. to your taste
Pepper ..1 tsp+/- .. to your taste
Oregano ..1 tbsp+/- .. to your taste
Basil ..1 tbsp+/- .. to your taste
Red pepper ..1 tsp+/- .. to your taste
For best results, soak beans overnight to soften.
Then boil for about an hour....Or use precooked canned beans in a pinch.
Add pork, and spices together in a soup pan.
Add enough water to nearly cover, cook on high until water is mostly gone, and onions start to brown.
Add tomatoes, bring back to a boil.
Add beans, and about a quart of water (as needed)...bring back to a boil.
Reduce heat to medium, cover loosly, and simmer until beans are tender.
Serve with corn bread or crackers.
